This was amazing. I omitted the lemon zest only because I didn’t have it on hand. My husband and four year old LOVED it. Will definitely make this again.

This was very good. Meat was moist and flavorful. I used softened butter with only garlic and fresh herbs and rubbed it onto the roast. Used one cup of beef broth. 2 1/2 lb. roast 15 min. high pressure and 15 minutes rest before releasing pressure. Thank you

I used oregano because I didn't have parsley or thyme, and lemon juice, because I didn't have lemon zest. I used a 12 oz beer for the liquid. Cooked for 20 min because my loin was 3 lbs. I also thickened the liquid afterwards with a tablespoon of corn starch in cold water. Excellent! The drippings were the perfect addition to the taste of the meat! We both loved it, and I will definitely make this again!
